Recipe Ingredients:
- 3/4 lb frozen chicken*
- 1 14oz can diced tomatoes
- red and green peppers/capsicum (fresh or canned)
- 1 onion, thinly sliced
- 1 packet taco seasoning mix
- 12 flour tortillas
- 1 1/2 cups cheddar cheese
- 1 tsp salt
- 1 tsp pepper
Recipe Instructions:
- Place chicken, bell peppers, and onions in slow-cooker, then pour diced tomatoes over. Season with cumin, red pepper flakes, salt, and pepper.
- Cook on low for 6 hours, or until the chicken is cooked through.
- Remove chicken from slow-cooker and cut into strips.
- Serve fajitas in tortillas with desired toppings.
*Recipe Note: If frozen chicken is not available, substitute with canned chicken and reduce cook time to 2 hours.
