Slow-Cooker Fajitas

Recipe Ingredients:

  • 3/4 lb frozen chicken*
  • 1 14oz can diced tomatoes
  • red and green peppers/capsicum (fresh or canned)
  • 1 onion, thinly sliced
  • 1 packet taco seasoning mix
  • 12 flour tortillas
  • 1 1/2 cups cheddar cheese
  • 1 tsp salt
  • 1 tsp pepper

Recipe Instructions:

  1. Place chicken, bell peppers, and onions in slow-cooker, then pour diced tomatoes over. Season with cumin, red pepper flakes, salt, and pepper.
  2. Cook on low for 6 hours, or until the chicken is cooked through.
  3. Remove chicken from slow-cooker and cut into strips.
  4. Serve fajitas in tortillas with desired toppings.

*Recipe Note: If frozen chicken is not available, substitute with canned chicken and reduce cook time to 2 hours.
