Slow-Cooker Roasted Red Pepper Chicken

Recipe Ingredients:

  • 3 Chicken Breasts Diced*
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 2 cloves garlic minced
  • 1 medium-sized onion diced
  • 2 cups diced tomatoes or 1 can diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 tsp pepper
  • 1 green pepper/capsicum diced
  • 1 red pepper/capsicum diced
  • 1 zucchini sliced
  • 1/4 cup low-fat sour cream (optional)
  • rice or tortillas (optional)

Recipe Instructions:

  1. Place all ingredients in slow-cooker except for bell peppers/capsicum, zucchini, squash, and sour cream. Cook on low for 4-6 hours.
  2. Add vegetables, then cook for another hour on low heat.
  3. Turn off slow-cooker then stir in sour cream. Serve over rice or on tortillas, then garnish with cilantro and serve.

*Recipe Note: If chicken breasts are not available, substitute thighs, frozen chicken, or canned chicken. If canned chicken is used, decrease cooking time in Step 1 to 2 hours.
