Recipe Ingredients:
- 3 Chicken Breasts Diced*
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tsp chili powder
- 1/2 tsp salt
- 2 cloves garlic minced
- 1 medium-sized onion diced
- 2 cups diced tomatoes or 1 can diced tomatoes
- 1/2 cup chicken broth
- 1/4 tsp pepper
- 1 green pepper/capsicum diced
- 1 red pepper/capsicum diced
- 1 zucchini sliced
- 1/4 cup low-fat sour cream (optional)
- rice or tortillas (optional)
Recipe Instructions:
- Place all ingredients in slow-cooker except for bell peppers/capsicum, zucchini, squash, and sour cream. Cook on low for 4-6 hours.
- Add vegetables, then cook for another hour on low heat.
- Turn off slow-cooker then stir in sour cream. Serve over rice or on tortillas, then garnish with cilantro and serve.
*Recipe Note: If chicken breasts are not available, substitute thighs, frozen chicken, or canned chicken. If canned chicken is used, decrease cooking time in Step 1 to 2 hours.
