Breakfast for Dinner Casserole

Ingredients:

  • 6 eggs or egg whites
  • 3 tbsp of parmesan cheese
  • 1 cup of spinach
  • 1 cup of tomato
  • 1 cup of onion
  • 4-6 slices of chopped or diced ham (optional)
  • Pinch of sea salt and/or seasonings to flavor
  • Slices of wheat bread (optional)

Instructions:

  • Preheat toaster oven to 350°F
  • Beat eggs lightly with a fork
  • Add seasonings for flavor
  • Sprinkle with parmesan/Romano cheese
  • Add sliced tomato, spinach and/or onion
  • Add ham
  • Pour into a casserole dish (or oven safe glass bowl)
  • Bake for 15-20 minutes on wire rack

Note: Remove and let cool. Serve with slices of whole wheat bread, if desired
