Ingredients:
- 3-4 medium white potatoes
- 1 tbsp olive oil
- 1 pinch of salt
- 1 pinch of pepper
- 1 can (14.5 ounces) of diced tomatoes
- 1 can (14.5 ounces) of beans (black, garbanzo, or chili)
- 1 package chili seasoning
- 1 can (16 ounce) canned ground beef
- 1/2 cup diced onions
- 1 cup low-fat shredded cheddar cheese
Instructions:
- Set the toaster oven to “Bake” and preheat to 425°F.
- Wash the potato, and slice lengthwise into 1/4 inch slices and cut again into 1/4 inch strips. As you cut the potatoes, toss them into a bowl of cold water and let them soak for about ten minutes.
- Pat the potato slices dry and toss them in another bowl.
- Add the olive oil, salt, and pepper.
- Place on the baking tray and cook for 25-30 minutes or until golden.
- Mix diced tomatoes, chili seasoning, canned ground beef, and diced onions in a bowl
- Place on top of fries and put back in toaster oven for 15 minutes.
- Top with shredded cheddar cheese and serve.
