Mediterranean-Style Bell Peppers

Ingredients:

  • Green, red, and yellow bell peppers
  • Fresh chopped parsley
  • 2 tbsp of olive oil
  • 1 garlic clove
  • 1 tbsp of capers
  • 3 tbsp of breadcrumbs
  • Salt and Pepper to taste

Instructions:

  1. Wash and cut peppers into strips
  2. Heat skillet or saucepan on low and add olive oil, garlic clove, and bell pepper strips to skillet.
  3. Season with salt and pepper to taste and add 1 tbsp of capers
  4. Cover with lid on low heat for about 20 minutes until tender
  5. Remove from heat and add 3 tbsp of breadcrumbs and fresh parsley
  6. Let cool, and enjoy! Top with mozzarella cheese if desired.
