Ingredients:
- Green, red, and yellow bell peppers
- Fresh chopped parsley
- 2 tbsp of olive oil
- 1 garlic clove
- 1 tbsp of capers
- 3 tbsp of breadcrumbs
- Salt and Pepper to taste
Instructions:
- Wash and cut peppers into strips
- Heat skillet or saucepan on low and add olive oil, garlic clove, and bell pepper strips to skillet.
- Season with salt and pepper to taste and add 1 tbsp of capers
- Cover with lid on low heat for about 20 minutes until tender
- Remove from heat and add 3 tbsp of breadcrumbs and fresh parsley
- Let cool, and enjoy! Top with mozzarella cheese if desired.
