Ingredients:
- 2 tbsp extra virgin olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1/2 tsps of minced garlic
- salt and pepper (to taste)
- 1/2 tsp of red pepper flakes
- 1/2 tsp chili powder
- 1 cup of water
- 4 cups of broth (either chicken or vegetable)
- 2 tbsp of freshly chopped parley
- 1/2 cabbage, chopped
Instructions:
- Heat olive oil over medium heat in large pot.
- Add onions, carrots, celery, and season with pepper, salt, and chili pepper
- Saute vegetables for 5-6 minutes or until soft.
- Add minced garlic, broth, water, and bring to a simmer
- Add cabbage. Allow to wilt for about 6 minutes.
- Remove from heat, adding in red pepper flakes and parsley.
- Season to taste with salt and pepper and add fresh parsley for presentation.
- If desired, pair this meal with cornbread, saltine crackers, pulled pork, shredded chicken or braised beef.
