Cabbage Soup

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 tsps of minced garlic
  • salt and pepper (to taste)
  • 1/2 tsp of red pepper flakes
  • 1/2 tsp chili powder
  • 1 cup of water
  • 4 cups of broth (either chicken or vegetable)
  • 2 tbsp of freshly chopped parley
  • 1/2 cabbage, chopped

Instructions:

  1. Heat olive oil over medium heat in large pot.
  2. Add onions, carrots, celery, and season with pepper, salt, and chili pepper
  3. Saute vegetables for 5-6 minutes or until soft.
  4. Add minced garlic, broth, water, and bring to a simmer
  5. Add cabbage. Allow to wilt for about 6 minutes.
  6. Remove from heat, adding in red pepper flakes and parsley.
  7. Season to taste with salt and pepper and add fresh parsley for presentation.
  8. If desired, pair this meal with cornbread, saltine crackers, pulled pork, shredded chicken or braised beef.
