Ingredients:
- 8 oz pinto beans (canned)
- 3 tbsps olive oil
- 1 medium onion, finely chopped
- 10 small garlic cloves, cut in half
- 1 tsp salt, 1/4 tsp pepper, and other desired seasonings
- 4 tbsps tomato paste
- 2 tbsps chopped parsley to garnish
Instructions:
- Drain beans and add them with 3 cups water to a medium pot.
- Cover and bring to a boil until pot steams. Turn heat to medium-low.
- Simmer, covered, until beans are soft and tender (around 20 minutes). Keep covered on stove and move to next step.
- Heat olive oil in a medium pot over medium heat and cook the onions and garlic until soft and slightly brown, stirring whole time.
- Pour in the beans with the water, stir in the tomato paste and the spices.
- Cook, uncovered, over medium heat for about 30 minutes, or until the sauce is thick enough. Stir occasionally. Adjust to taste as desired
- Pour into a bowl and garnish with parsley.
