Ingredients:
- 1 16oz cans of pinto beans
- 1 teaspoon of ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon of cayenne pepper
- 1/2 cup of chopped onion (optional)
- 1 egg
- Salt and Pepper to taste
- 1 tablespoon of whole wheat flour
- 1/2 cup of bread crumbs
- 1 cup of cooked quinoa
- 1-3 tablespoons of vegetable oil
Instructions:
- Drain and rinse the pinto beans.
- Boil the pinto beans in water over medium heat for 10-15 minutes and drain well.
- Place 1/2 of the beans in a food processor or mash with a spoon
- Add spices of choice
- Add chopped onions (optional) and egg and mix with smashed beans. Note: the mixture will not be smooth.
- Place the bean mixture in a large bowl and add salt, pepper, flour, bread crumbs, quinoa, and remaining beans
- Combine all ingredients and form into patties
- Refrigerate the burgers for an hour
- Over medium-high heat in a large skillet, cook burgers per side for 3-4 minutes in vegetable oil
- Add condiments, bread of choice, and enjoy!
