What is yellow squash?
Yellow squash is a vegetable with a thick rind, or skin. They are grown in the summer so they are frequently called “summer squash.”1 They are typically cylindrical and can be green or yellow. They belong to the same squash family as zucchini, cousa squash, pattypan squash, tromboncino/zucchetta, immature ridge gourd luffa, and aehobak, or Korean zucchini. Crookneck and straightneck squash are both referred to as yellow squash.


What does yellow squash look like?
Yellow squash and can come in a few different shapes. The most common yellow squashes found in the south are straightneck and crookneck squash. Straightneck squash has a long, straight neck and round base. They look similar to a yellow zucchini.2 Crookneck squash has a curved neck and an oblong shape.2
Crookneck squash has larger seeds and thicker, waxier skin than most other summer squash varieties.3 This type of yellow squash is harvested when it is more mature to gain the curved neck. Be careful, this variety of yellow squash is harder to slice into rounds so it’s best to dice it.3


Straightneck squash resembles crookneck squash with a similar tapered neck and bulbous base, but its neck does not curve quite as much as crookneck squash.3 Crookneck squash have bumpy skin and pale white flesh like crookneck squash. This variety of yellow squash has the best flavor and texture when it is 6-inches or less.3 This variety of squash is easier to cut into rounds.


What does yellow squash taste like?
Yellow squash may look like wintermelon on the inside but they don’t taste the same. Yellow squash has a mild, sweet flavor with edible seeds on the inside.2 Yellow squash tastes sweeter than zucchini and this difference in flavor becomes more pronounced when its cooked. Yellow squash becomes even more mellow and sweet when cooked.2 Since there are so many different varieties of yellow squash the exact flavor and texture may differ slightly, but ultimately they all taste very similar.4
What are the health benefits of yellow squash?
Yellow squash is an excellent source of vitamin C that neutralizes free radicals in the body and prevents oxidative stress that can cause cell damage.5 Vitamin C also helps strengthen the immune system, promote healthy mucous membranes, protect against cognitive decline, and promote collagen production.6
Yellow squash is rich in other antioxidants, including phenolic compounds and carotenoids, including beta-carotene, zeaxanthin, dehydroascorbic acid, and lutein.6 These have been shown to protect against various chronic conditions like cancer. Beta-carotene converts into an active form of vitamin A to promote skin health, boost immunity, improve eye health, and maintain arterial health.5 Zeaxanthin and lutein protect the eyes against vision loss and age-related conditions like glaucoma, macular degeneration, and cataracts.6
Yellow squash is rich in iron and folate.6 A cup of sliced yellow squash contains 9 percent of daily iron requirement and 14 percent of daily folate requirement.7 Iron and folate are essential to maintain normal red blood cell production and prevent anemia. Folate is helpful for pregnant individuals early in the pregnancy to support the nervous system and fetal brain development.6
Yellow squash can help lower cholesterol levels. It is cholesterol free and can help lower total cholesterol and LDL cholesterol.6 Yellow squash is a great source of dietary soluble fiber which binds to cholesterol in the intestine and removes it from the body.8 High levels of cholesterol can cause fat to deposit in the arteries. This fat grows and hardens into plaque which narrows blood vessels. This makes it difficult for blood to flow and leads to further complications like high blood pressure, stroke, heart attack, coronary artery disease, and peripheral vascular disease.6
Yellow squash supports liver function. It’s a mild diuretic that helps flush out toxins and excess water from the body.6
What are some common reasons why people don’t like yellow squash?
Taste
Squash’s mild flavor can turn bitter on occasion and turn people away from the vegetable. This bitter flavor is due to high levels of cucurbitacin. This is likely due to an environmental stressor while the squash is growing, like a wide temperature flux or irregular irrigation.9 Another reason the squash might be bitter is because they can easily be cross pollinated with other nearby plants.9
Bitterness due to these factors are grown into the plant, but highly concentrated in the stem. If you have a mildly bitter squash that you don’t want to waste there are a few tricks you can do. Peel the squash starting from the blossom end (the wider end of the squash) and then cut off and discard a couple of inches at the stem end (the skinny end of the squash).9
Squash is a great vegetable to “hide” in other dishes. Squash can enhance the nutrition of the dish but the flavor is mild enough to not overtake it.10 Yellow squash is harder to puree than other squash varieties, but there are plenty of great ways to hide it in food. See some examples below.
Pasta sauce

Muffins

Pancakes

Hummus

Yellow squash is best stored unwashed in a plastic bag in the refrigerator or in the produce drawer for up to 5 days. Rinse it under cold water and trim both ends before using it.16
Unsure how to cook it
Yellow squash is a very versatile vegetable. A few different ways to cook it are:17 6
- Raw either in slices or cut up and added to a salad or dip
- Roasted or baked in the oven
- Steamed
- Sautéed
- Grilled
- Fried
- Air fried
- Turned into squash noodles
- Blended into a smoothie
- Turned into a boat and stuffed
- Used as a base for curry
- Soup
Yellow squash is a powerhouse vegetable that can be used in just about any dish out there. Feel free to get creative with it!

International recipes featuring yellow squash
Yellow squash is a traditionally southern vegetable but that doesn’t stop people from incorporating it in their own cultural recipes. See a few international yellow squash recipes below!
Yellow Squash Curry- Serves 4
Yields: 4 servings. 15 mins prep time. 30 mins cook time. 45 total time mins.
Ingredients:18
- 1 yellow squash, cubed
- 1 onion, finely chopped
- 1 green chili, minced
- 1 tomato, chopped
- 1 tsp ginger garlic paste
- 1 tsp red chili powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1/4 tsp garam masala
- 1/4 cup coconut milk
- salt to taste
- 1/4 tsp mustard seeds
- 1/4 tsp cumin seeds
- 5 curry leaves
- cilantro for garnish
- 2 tbsp oil
Instructions:
- Heat oil in a pan, splutter mustard seeds, cumin seeds, and curry leaves
- Add chopped onion and green chili and sauté nicely, followed by ginger garlic paste
- Add chopped tomatoes and sauté till everything forms a gravy
- Now add the yellow squash and fry along with turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cover and cook till the squash is cooked, adding little water as needed
- Add coconut milk and let the gravy simmer for a few minutes
- Garnish with coriander leaves
Serving Suggestion: serve the yellow squash curry with chapati or plain rice
Yellow Squash Dal/Pappu
10 mins prep time. 20 mins cook time. 10 mins NPR time, 40 mins total time.

Ingredients:19
- 1 cup toor dal/split pigeon peas
- 3 cups water
- 2 yellow squash, chopped (about 2 cups)
- 1 large tomato, diced
- 5 thai green chili/any chili
- 5 cloves garlic, chopped
- 1 tsp turmeric powder
- 2 tsp red chili powder or to taste
- salt to taste
- 1 lemon sized tamarind, soaked in 1 cup water
Ingredients for tempering the dal/tadka
- 2 tbs ghee/avocado oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 dried red chilies
- 1/4 cup onion, finely chopped
- 6 curry leaves
- 3 cloves of garlic, minced
- Cilantro or coriander leaves for garnish
Instructions:
- Rinse and Drain Toor dal and add it to Instant pot. Add 3 cups water, Turmeric and Red chili powder.
- Chop summer squash, tomato, green chili and garlic roughly and add to the Toor dal.
- Close the lid and set the pressure cook/Manual mode for 8 minutes, Vent in Sealing position.
- Soak a lemon sized tamarind in 1 cup water.
- Let the pressure release naturally and gently mash the dal with the back of the spoon.
- Squeeze the tamarind to extract the juices, discard the pulp and save the tamarind juice.
- Turn on Sauté mode on normal and set the time for 10 minutes. Add tamarind juice and salt to the cooked and mashed dal, mix once thoroughly and let everything come to a boil.
Tempering the dal:
- Add ghee to a sauté pan and when it melts and turns hot, add dried red chilies, mustard seeds and cumin seeds.
- When the mustard seeds splutter, add finely chopped onion, curry leaves and garlic. Sauté till the onions are lightly browned. Add this tempering to the dal and mix it in.
