Mexican Spaghetti

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning*
  • 1 (7 ounce) can diced green chilies, undrained
  • 1 (14.5 ounce) can canned diced tomatoes, undrained
  • 1 (8 ounce) can of corn, drained
  • 1 (8 ounce) can tomato sauce
  • 2 3/4 cups water
  • 8 ounces dried spaghetti noodles
  • 1 cup shredded cheddar cheese

Instructions:

  1. In a large skilled over medium heat, brown beef until there is no longer any pink in the beef. Drain off any fat.
  2. Stir in taco seasoning, green chilies, diced tomatoes, corn, tomato sauce, and water. Bring to a boil.
  3. Stir in noodles.
  4. Reduce the heat and simmer, covered, for 20-25 minutes or until the pasta is al dente.
  5. Sprinkle with cheese and serve.
